SOURCING
When a case leaves our dock, it isn't ours anymore — it belongs to a kitchen that will build its reputation on what's inside. That's a serious thing to hand someone, and the Cocina Standard is how we make sure it's worthy of the trust. It's our promise written down: the quality and service framework that governs how Lopez Foods sources product, checks it, delivers it, and stands behind it. Sourcing. We source to a spec and we name our sourcing. That means we know where product comes from and we hold it consistent, so the tortilla, chile, or cheese your recipe was built on performs the same way order after order. Specialty and region-named items are sourced for authenticity, not convenience — depth over generic, because the cuisine deserves it.
QUALITY CONTROL
Quality control. Product is checked on intake for quality, condition, and consistency. We'd rather catch a problem at our dock than let it reach your back door. The standard is simple: if it isn't right, it doesn't go out.
Held specs, no silent substitutions. Once your products and specs are set, we hold them. If a supply situation forces a change, you hear it from us first — with options — never by discovering it on the plate.
